Raw baby spinach with candied orange peel, blanched almonds, and fruit compote tossed in a light vinaigrette.
This is one of the best takes on a spinach salad I have ever had. The addition of the fruit compote is such a lovely touch, melding the raw spinach and candied orange together with the light crunch of the slivered almonds. It may look like a spinach salad, but it eats more like a layered and decadent dessert.
Terre dAcqua is located off a small plaza in the Travestere neighborhood of Rome.
What a pretty salad! This looks totally do-able at home, too. Does this mean you were recently in Italy?
Hi Liz! Yes, just got back from a week in Rome. I wrote a little something about it in Saturday’s post–it was really one of the best culinary trips I have had, currently flooding my blog with posts about the food there!
I love this recipe, very very simple but deilioius. I have bookmarked it!
I’m so glad! It was such a delicious combination. I hope you try it out!
