Raw sushi-grade salmon drizzled with aromatic fennel basil ice cream and sprinkled with scallions.

This is one of the best and most original raw salmon preparations I have ever tried. The savory ice cream accompanies the already delicious fish with a lovely, fresh, pesto-like flavor, and the scallions add a perfect, subtle touch.

  2. Yes, this was actually probably one of the tastiest things I had while there! I love raw fish, especially paired with some kind of tantalizing sauce, and this fish was exceptional. I find it funny that they called it ice cream – I guess you could argue that the texture was a little like melted ice cream, but I think they might have more accurately referred to it as sauce. It wouldn’t have sounded as fancy though. 😉
